ALMOND FLOUR BREAD 

This almond flour bread loaf is a great alternative to regular bread.  Use it for delicious and healthy sandwiches, warmed up with some butter, or whatever else your healthy heart desires in a bread!

Ingredients: 

  • 7 Eggs (room temperature) 
  • 1/2 Cup Butter (melted) 
  • 2 Tablespoons Coconut Oil 
  • 2 Cups Almond Flour 
  • 1 Teaspoon Baking Powder 
  • 1/2 Teaspoon Xanthan Gum 
  • 1/2 Teaspoon Salt 

Directions: 

  1. Preheat oven to 355 degrees. 
  2. Mix eggs together with a mixer in a large bowl until well combined, approximately 2 minutes. 
  3. In a separate bowl, add the coconut oil to the melted butter to soften the coconut oil.  Let oil mixture come to room temperature. 
  4. Slowly add the oil mixture to the eggs while mixing with a mixer until well combined. 
  5. Combine in another bowl the almond flour, baking powder, Xanthan Gum, and salt until well combined.  Then slowly add portions of the dry ingredients to the egg/oil mixture until thick and all is well combined. 
  6. Line your loaf pan with baking paper and put the mixture in the pan, smoothing the top afterwards. 
  7. Bake in the oven at 355 degrees for approximately 40 minutes or until the top is golden brown and it passes the “toothpick test” (insert a toothpick in the center and if it pulls out clean, it is done.  If not, leave in the oven for longer until it pulls out clean.) 
  8. Let the loaf sit for approximately 5 minutes, then remove from pan and baking paper and place on a cooling rack until cooled. 
  9. Slice and enjoy!
